Easy Slow Cooked Chicken & Rice

Ingredients:
- Chicken tenderloins or fillets, roughly 1kg.
- 500g Illalangi Pasta Sauce
- 1 Capsicum
- 1 Onion
- 400g Canned Beans (Four Bean Mix)
- 400g Can of corn
- 400g Can of tomatoes
- 3/4 Cup Rice, to serve
- Sour Cream or Coconut Cream (optional)
Seasoning:
Any pre-made fajita or burrito seasoning works here, but if you would like to make your own combine the following ingredients in a small bowl:
Method:
Begin cooking roughly 4 hours before serving.
- Season chicken and place into slow cooker with pasta sauce and canned tomatoes. Turn slow cooker onto high.
- Chop capsicum and onion up and mix in with chicken. Leave for an hour.
- Drain liquid from canned corn and beans and add to slow cooker. Stir through.
- Begin cooking 3/4 cup rice half an hour prior to serving. Add a tablespoon of sour cream on top if desired.
