One-pan baked pulled pork tacos

Ingredients (10):
- 12 hard taco shells
- 250g Slow Cooked Pulled Pork
- 420g can Black Beans, drained, rinsed
- 240g jar Mexican Sauce
- 120g (1 1/2 cups) Shredded Cheese
- 1 tomato, finely chopped
- 125g can corn kernels, drained
- 2 tbsp chopped fresh coriander leaves
- 2 tbsp lime juice
Method:
- Preheat oven to 220C/200C fan forced
- Place taco shells, standing upright, in a large baking dish. Fill shells with pork, beans, Mexican sauce and 1 cup cheese. Sprinkle remaining cheese all over dish. Bake for 10 minutes or until cheese has melted and pork has heated through.
- Meanwhile, combine tomato, corn, coriander and lime juice in a bowl. Season
- Top shells with chipotle topping and tomato mixture. Serve.
