One-pan baked pulled pork tacos

Ingredients (10):

  • 12 hard taco shells
  • 250g Slow Cooked Pulled Pork
  • 420g can Black Beans, drained, rinsed
  • 240g jar Mexican Sauce
  • 120g (1 1/2 cups) Shredded Cheese
  • 1 tomato, finely chopped
  • 125g can corn kernels, drained
  • 2 tbsp chopped fresh coriander leaves
  • 2 tbsp lime juice

Method:

  1. Preheat oven to 220C/200C fan forced
  2. Place taco shells, standing upright, in a large baking dish. Fill shells with pork, beans, Mexican sauce and 1 cup cheese. Sprinkle remaining cheese all over dish. Bake for 10 minutes or until cheese has melted and pork has heated through.
  3. Meanwhile, combine tomato, corn, coriander and lime juice in a bowl. Season
  4. Top shells with chipotle topping and tomato mixture. Serve.
