One Bowl Breakfast Cookies - Gluten & Refined Sugar Free

Makes 10 cookies
Ingredients:
- 2 tbsp ground flax seeds
- 2 cups gluten free oats
- 2/3 cup desiccated coconut
- 1/2 cup almond butter
- 1 mashed banana
- 3 tbsp maple syrup
- 1/2 tsp baking powder
- 1/4 cup dried cranberries
- 1/4 cup pumpkin seeds
- 1/4 cup pistachios
Method:
1. Preheat oven to 160C fan
2. Prepare your flax ‘eggs’ by mixing two 2 tbsp of ground flax with 5 tbsp of water and set aside
3. Add all the other ingredients to a large mixing bowl and add in the flax eggs. Stir well to combine
4. Divide into 10 equal portions and mould them into a cookie shape on a large baking tray. You can use a cookie cutter and scoop the mixture inside before pressing it down slightly.
5. Bake for about 15 mins
